Bordeaux, Burgundy and a Dash of Champagne

In preparation for our wine study class on January 8th Nicole provided a Bordeaux and Burgundy quiz.  It seemed fitting to retaste these 2 regions: a left bank and right bank Bordeaux along with a red Burgundy. Of course the first class of the new year should also start with some bubbles. Sadly, I had to pick these wines out myself. Dennis Kohl has retired from Trigs Cellar 70. I so hope the high quality and amazing selection continues.

I made an Asian Inspired Shrimp Salad from a book Dianne gave me for Christmas, "Perfect Pairings: A Sommelier's Practical Advice for Partnering Wine with Food" by Evan Goldstein Recipes by Joyce Goldstein. I love that the table of contents is divided by grape varietal. I was looking for something to serve with Champagne and easily found 4 options. The wine options with each recipe include options fro everyday, premium and splurge. The Asian Inspired Shrimp Salad went well with the Champagne but I also tried it with a 2007 Riesling Spatlese and it was fantastic!!!

Bacon wrapped blue cheese stuffed dates, venison sausage, smoked cheeses from Texas (Jan) and chocolate bourbon truffles (Dianne) were all wonderful with the Bordeaux wines.

The Wines

Champagne Moutard Brut Rose de Cuvaison 11-14% abv. $44.99 Vignoble de Champagne La Cote des Bar

My Tasting Notes:
Appearance: clear, medium intensity salmon color. Nose: clean light intensity with aromas of light roses and strawberry. The palate was dry high acidity light body and medium finish. The flavors were of red apple, strawberry, yeast, blackcurrent leaf and a bit of cedar.

Other information.
Not only did this taste great with the Asian shrimp salad it was very good with brie.
There are 5 vineyard areas. Cotes des Bar is farther south of the other areas and is mostly planted in Pinot Noir. It is Brut so has less than 1.2% sugar.  Rose Champagnes are richer and more full bodied than goldens. After reading "The Wine Bible" 2nd edition by Karen MacNeil, chapter on Champagne, where I discovered only 6% of all exports are Rose and I decided to try it when I spotted one at Trigs. A rosé of pinot noir from the Côte des Bars, this gains its color from a short maceration on the grape skins.

The puzzle slowly emerges.
My Tasting Notes:
Appearance is clear and intensity medium, color is garnet. The nose is clean and intensity medium with some perfume in the aroma, red fruit like cherry.  There was also some forest floor on the nose. Dianne also found black currant, prune and tobacco. The palate was dry, low acidity, low tannin with medium body and medium finish. The aroma for me went immediately to mushroom, cabbage and leather. I worked hard to find fruit and the best I could come up with was cranberry and blackberry. Dianne had some stewed fruit in her flavor description.

Other Information
I tasted this wine in December with Nicole's group.  After reviewing my notes from that event, I discovered the need to be more detailed. These notes are a little more elaborate. This wine needs food.
2010 Chateau Fontbernard Montagne Saint Emilion  14% abv. $18.99 Grand Vin de Bordeaux Appelation Montagne Saint Emillion Controlle. 80% Merlot 15% Cabernet Franc and 5% Cabernet Sauvignon

My Tasting Notes:
Appearance is clear, medium intensity and garnet color. The nose is clean with pronounced intensity. There were aromas of vanilla, black current, some juniper and plum. Dianne also found some leather on the nose. The palate was dry, medium acidity, medium body, tannin and finish. The flavor was that of stewed fruit, blackberry and a little earthy/vegetal.

2012 Chateau Grand Clapteau Olivier, Haut-Medoc 13% abv. $21.99  54% Cabernet Sauvignon, 43% Merlot 5%  Petit Verdot

Appearance is clear, medium intensity and garnet color. The nose is clean with pronounced intensity. There were aromas of juniper berry, black currant with a little leaf and vegetal. The palate was dry, low-medium acidity, medium body, & tannin and long finish. The flavor was that of leather, blackberry and juniper berry.
