Doing some research on sparkling wines
Cava is sparkling wine from Spain made with indigenous grapes like Macabeo, Xarel·lo and Parellada. It is made in the méthode champenoise, which is the traditional method used in Champagne where the secondary fermentation occurs in the bottle (rather than in a bulk tank process). Cava is a Denominación de Origen (DO), meaning that it can only be made in certain regions of Spain, and is primarily produced in the Penedès region in Catalonia.
