As we study details about the 3 major wine regions of France we will also revisit the taste with these wines.

Wine Information
We started by comparing the Rose from Tavel with one from Provence. They are extremely different in color aroma and taste

2013 Domaine de la Mordoree La Dame Rousse Tavel Rosé 14% abv, $38.99
Grapes: 60% Grenache, 20% Syrah and 20% Consault

My Tasting Notes: (Side note: This is by far the best Rose I have ever tasted!!!)
Appearance: Clear, deep intensity for a Rose. Salmon almost orange in color
Nose: Clean nose with medium (-) intensity. The aromas were strawberry, red cherry. nutmeg and blossom
Palate: dry with medium (+) acidity medium body, medium (+) finish. The flavor was raspberry, leather ad stone with a little cinnamon and vegetal.
Assessment of Quality (balance, intensity, length and complexity). Outstanding quality
Level of readiness to drink. Drink now

Information from the bottle. Produced from sustainable agriculture. All grapes are hand picked and rigorously sorted.
The main terroirs in Tavel as per winery website are rolled quartzite pebbles, from the Villafranchian terrace. They restore on summer nights the heat accumulated during the day. Calcareous Lauzes, of Barremian limestone scree. Originally Barremian in whitish color, they reflect a large part of the sun's rays thus activating the ripening of berries.  Sands fluviatile astens. These soils are mostly poor in humus and organic matter making Tavel an ideal place for growing grapes.

Pair with cold meats and delicatessen, fowl, white meats, grilled lamb with Provence herbs, fish soup, fried fish, pastas, pizzas and all Asian dishes.

Robert Parker's Wine Advocate. Robert Parker 90 Almost as good and a fabulous effort, the 2013 Tavel Rose La Dame Rousse is upfront and perfumed, with citrus blossom, crushed roses and wild strawberry-like aromas and flavors. Medium-bodied, layered and seamless, with perfectly integrated acidity, it's a knockout rose to enjoy over the coming year or two as well. Don’t miss these two superb roses

2013 P. Matrot Puligny Montrachet Les Combettes 1er Cru 13% abv $49.00 from Last Bottle Cote-de-Beaune
Grape: Chardonnay

My Tasting Notes:  (Side note: Amazingly delicious. Dianne is not a lover of Chardonnay and she liked this one.)
Appearance: Clear with medium intensity and gold in color
Nose: clean with medium intensity and aromas of apricot, peach, bread and hazelnut
Palate: off dry. medium(+) intensity medium(+) body and medium(+) finish. Flavors of nectarine, mint, yeast and a bit vegetal
Assessment of Quality  (balance, intensity, length and complexity) Outstanding quality
Level of readiness to drink. Can drink now but has potential for aging.

Note: 1er or 1st (in English) Cru is shorthand for premier cru.

About how the wine was made. Average age of the vines: 40 years. Indigenous yeasts. Fermentation in one- to five-year-old barrels. Temperature control (18-20 °C), duration of the fermentation 8 to 10 weeks. Maturing on lees for 11 months. Complete malolactic fermentation. “Bâtonnage” (stirring up of the lees) depending on the vintage. Bottling after one racking.

2013 Chateau Mont Thabor Chateauneuf-du-Pape 15% abv $25. from Last Bottle
80% Grenache. 10% Syrah, 5% Mouvedre, 5% Cinsault
Southern Rhone

My Tasting Notes: (Side note: tasted great with the sausage and bean stew. I have been waiting a long time to give this a try and absolutely loved it)
Appearance: clear medium intensity and garnet in color
Nose: clean with pronounced intensity. Red cherry, meaty and leather aromas with mint, ginger and nutmeg. Dianne had black currant, blackcurrant leaf and tobacco)
Palate: off dry, medium(+) acidity, medium tannin and body with a long finish. Flvors of prune, licorice, smoke, coffee and tobacco.
Assessment of Quality  (balance, intensity, length and complexity). Outstanding
Level of readiness to drink: Can drink now but has potential for aging.

More Information.
From the winery
Located in the town of Bédarrides, Château Mont Thabor belongs to the Stehelin family since 1880. 
4 hectares in Chateauneuf du Pape located on the plateau with a strong dominance of rolled pebbles and sandy red clay 6 hectares of Côtes du Rhône around Castle on light ground with presence of pebbles. 
The vines are worked in the philosophy of organic, without certification. Manual harvesting.
The wines are vinified and raised quite traditionally, concrete vats without destemming, aging in barrels, no filtration. The wines are rich, robust, spicy and very complex. Paradoxically, they possess great finesse.


2015 Chateau Gigognan Vignes du Prieure Cotes du Rhone  14.5% abv $29.99
Grapes: 50% Grenache, 40% Syrah and 10% Mouvedre

My Tasting Notes: (Side note: we tasted amazing wines on this day.  This is indeed one of them)
Appearance: clear, deep intensity with a ruby color. 
Nose: clean, medium intensity. Aromas of plum and blueberry with leather, meat, honey and nutmeg.
Palate: dry, medium acidity, medium(+) tannin, medium body and long finish. The flavors of red and black cherry, cinnamon, black pepper, coconut and leather.
Assessment of Quality  (balance, intensity, length and complexity) Outstanding
Level of readiness to drink. Can drink now but has potential for aging.

Terroir: 
Old stone terrace. South facing, on a slope sloping slightly.
Yield 30 hL / Ha Vinification Manual and mechanical harvest, grapes pressed and de-stemmed, vinified varietal grape variety with long maceration (15 days). Assemblages after malolactic fermentation and fermentation in concrete tanks.

Nose: clean and pronounced intensity. Aromas: blossoms, blueberry and blackberry, mint, tobacco and leather. Dianne found violet, raspberry, blackberry and black currant.
Palate: dry, medium acidity, high tannin, full body and long finish. Flavors of black currant, prune, black olive, juniper, chocolate, meaty, leather.
Assessment of Quality  (balance, intensity, length and complexity). Outstanding
Level of readiness to drink. Can drink now but has potential for aging.
